This product, our Sake Lees–Blended Nuka Bed, was developed with one clear goal: to deliver an authentic, full-flavored nuka experience that’s easy to maintain at home. While nuka beds are beloved for their depth of flavor, many people find them hard to keep up with because they can feel “time-consuming to start,” “messy to manage,” or “difficult to keep tasting consistent.” That’s why we designed this nuka bed by prioritizing both everyday ease of use and delicious results.
For flavor, we focused on sake lees. Sake lees offer a gentle fermented aroma and rich umami that naturally enhance the taste of vegetables. We tested different blends and balances to soften the sharper notes sometimes associated with nuka, creating a more refined, well-rounded finish. Because the flavor can change depending on the vegetables used and the pickling time, we repeated trials to find conditions where the aroma, saltiness, and umami develop consistently.
Next, we worked on making it easier to continue. We aimed for a container-free design: instead of transferring the nuka bed into another container, you can use the pouch as it is. This reduces the hassle of preparation and cleanup, and makes it easier to store and use daily in the refrigerator—so it fits smoothly into your routine.
We set the content size at 1 kg, a practical volume that’s easy to handle at home—large enough to stay stable, but not so large that it becomes difficult to manage or use up. This size also helps the nuka bed remain more consistent, even as moisture from vegetables is absorbed over time.
By carefully testing and refining the ingredients, blend, and packaging, we created a nuka bed that combines the aroma and depth of fermentation with a simple, beginner-friendly experience.
